G\u00fcvenli olmayan g\u0131dalar\u0131n \u00e7ok eski zamanlardan beri sa\u011fl\u0131k sorunlar\u0131na sebep oldu\u011funa dikkat \u00e7eken \u00d6zkan, \u201cG\u0131da g\u00fcvenli\u011fi t\u00fcm zamanlarda \u00f6nemsenen ve etkin tedbirler al\u0131nmas\u0131 gereken konulardan biri. D\u00fcnyada G\u0131da g\u00fcvenli\u011fi ile ilgili sorunlara y\u00f6nelik BM G\u0131da ve Tar\u0131m \u00d6rg\u00fct\u00fc (FAO), D\u00fcnya Sa\u011fl\u0131k \u00d6rg\u00fct\u00fc (WHO) gibi uluslararas\u0131 kurulu\u015flar ile her \u00fclkenin ulusal organizasyonlar\u0131, sivil toplum kurulu\u015flar\u0131 bilimsel \u00e7al\u0131\u015fmalar ger\u00e7ekle\u015ftirmekte ve g\u0131da g\u00fcvenli\u011finin sa\u011flanmas\u0131 ve g\u00fcvenli g\u0131daya eri\u015fim i\u00e7in \u00e7\u00f6z\u00fcmler \u00fcretmek \u00fczere ara\u015ft\u0131rmalar y\u00fcr\u00fct\u00fcyor\u201d dedi.<\/p>\n<p>Buna ra\u011fmen, g\u0131da g\u00fcvenli\u011finin \u00f6nemli bir sa\u011fl\u0131k sorunu olmaya devam etti\u011fini belirten \u00d6zkan, D\u00fcnya Sa\u011fl\u0131k \u00d6rg\u00fct\u00fc taraf\u0131ndan g\u0131da kaynakl\u0131 hastal\u0131klar\u0131n \u00f6nlenmesinde S\u00fcrd\u00fcr\u00fclebilir Kalk\u0131nma Hedefleri ve bu hedeflere y\u00f6nelik pek \u00e7ok g\u00f6sterge belirlendi\u011fini ve takip edildi\u011fini s\u00f6yledi.<\/p>\n<p><strong>KONTAM\u0130NE Y\u0130YECEK VEYA SULAR HASTALIKLARA NEDEN OLUYOR<\/strong><\/p>\n<p>\u00d6zkan, g\u0131da kaynakl\u0131 hastal\u0131klar\u0131n \u00e7o\u011funlu\u011funun kontamine yiyecek veya sudan kaynakland\u0131\u011f\u0131na dikkat \u00e7ekerek, D\u00fcnya Sa\u011fl\u0131k \u00d6rg\u00fct\u00fcn\u00fcn (WHO), g\u0131da zincirinde yer alan kurulu\u015flar\u0131n e\u011fitim ve fark\u0131ndal\u0131k d\u00fczeyinin artt\u0131r\u0131lmas\u0131na y\u00f6nelik \u00e7al\u0131\u015fmalar yapt\u0131\u011f\u0131n\u0131 ifade etti.  \u00d6zkan, bu \u00e7al\u0131\u015fmalar ile \u201cdaha g\u00fcvenli g\u0131da\u201d kapsam\u0131nda, \u00fcye \u00fclkeler aras\u0131nda g\u0131da g\u00fcvenli\u011fine y\u00f6nelik deneyimlerin ve etkinli\u011fi kan\u0131tlanm\u0131\u015f \u00e7\u00f6z\u00fcmlerin payla\u015f\u0131lmas\u0131n\u0131n ayr\u0131ca kar\u015f\u0131l\u0131kl\u0131 bilgi al\u0131\u015fveri\u015finin geli\u015ftirilmesinin ama\u00e7land\u0131\u011f\u0131n\u0131 anlatt\u0131.<\/p>\n<p><strong>SA\u011eLIK \u0130\u00c7\u0130N \u00d6NKO\u015eUL \u2018YETERL\u0130 VE G\u00dcVENL\u0130 GIDA\u2019<\/strong><\/p>\n<p>\u201cG\u0131da G\u00fcvenli\u011fi\u201d konusundaki ilk k\u0131lavuzun D\u00fcnya Sa\u011fl\u0131k \u00d6rg\u00fct\u00fc (WHO) taraf\u0131ndan 1990\u2019l\u0131 y\u0131llar\u0131n ba\u015f\u0131nda \u201cG\u00fcvenli G\u0131da i\u00e7in On Alt\u0131n Kural\u201d olarak yay\u0131nland\u0131\u011f\u0131n\u0131 belirten Dr. \u00d6\u011fr.\u00dcy. F\u00fcsun Zehra \u00d6zkan,  &#8220;Zaman i\u00e7inde daha basit ve daha genel kurallar\u0131n gereklili\u011fi fark edilerek s\u00f6z konusu k\u0131lavuz birka\u00e7 kez g\u00fcncellenmi\u015f ancak,  g\u00fcvenli g\u0131daya y\u00f6nelik temel kurallar de\u011fi\u015fmemi\u015ftir. \u2018Daha G\u00fcvenli G\u0131da Program\u0131n\u0131n Be\u015f Anahtar\u0131\u2019 ba\u015fl\u0131\u011f\u0131  alt\u0131nda yay\u0131nlanan ve g\u00fcn\u00fcm\u00fczde de hala ge\u00e7erli olan bu k\u0131lavuz kapsam\u0131ndaki bilgileri, sa\u011fl\u0131kl\u0131 gelecek nesiller i\u00e7in tekrar tekrar hat\u0131rlatmak gerekir\u201d diye konu\u015ftu.<\/p>\n<p>\u00d6zkan, g\u0131da kaynakl\u0131 hastal\u0131klar\u0131n \u00f6nlenmesinde \u2018G\u00fcvenli G\u0131da Program\u0131n\u0131n Be\u015f Anahtar\u0131\u2019nda yer alan kurallar\u0131  \u015f\u00f6yle s\u0131ralad\u0131:<\/p>\n<p>\u201cG\u0131dalara dokunmadan \u00f6nce, haz\u0131rl\u0131k a\u015famas\u0131nda \u00f6nce ve s\u0131k s\u0131k ellerin y\u0131kanmas\u0131, tuvalete gittikten sonra ellerin y\u0131kanmas\u0131, yemek haz\u0131rlamak \u00fczere kullan\u0131lan t\u00fcm y\u00fczeylerin ve ekipman\u0131n y\u0131kanmas\u0131 ve sterilize edilmesi, mutfaklar\u0131n ve g\u0131dalar\u0131n b\u00f6cek, kemirgen vb. korunmas\u0131, evcil ve di\u011fer canl\u0131 hayvanlar\u0131n, g\u0131da haz\u0131rlama ve muhafaza alanlar\u0131ndan uzak tutulmas\u0131.<\/p>\n<p>\u201c\u00c7i\u011f et ve deniz \u00fcr\u00fcnlerinin di\u011fer g\u0131dalardan ayr\u0131 tutulmas\u0131, \u00e7i\u011f g\u0131dalar i\u00e7in kullan\u0131lan b\u0131\u00e7aklar, kesme tahtalar\u0131 gibi ekipmanlar\u0131n ayr\u0131lmas\u0131, \u00e7i\u011f ve haz\u0131rlanmakta olan yiyeceklerin ayr\u0131 kaplarda, ayr\u0131 alanlarda, ayr\u0131 raflarda tutulmas\u0131.<\/p>\n<p>\u201c\u00d6zellikle et, yumurta ve deniz \u00fcr\u00fcnlerinin ve tekrar \u0131s\u0131t\u0131lmas\u0131 gereken g\u0131dalar\u0131n do\u011fru metotlar ile, \u00f6zelliklerine uygun olan s\u0131cakl\u0131klarda ve uygun s\u00fcreler dikkate al\u0131narak
